Cave Spring Sparkeling Brut 2004

This sparkling wine originates from the limestone-rich clay soil of the Beamsville Bench, a terrace of the Niagara Escarpment moderated throughout the year by on-shore breezes from nearby Lake Ontario. Fermented in the bottle entirely from the noble chardonnay grape, it was aged on its lees for 16 months prior to disgorging, resulting in a crisp, ‘brut’ style true to its cool-climate origins.

Cave Spring Icewine 2004

This sweet wine was made from Riesling grapes that were left to freeze naturally on the vine at the Cave Spring Vineyard. Hand-picked and pressed on the coldest December nights at temperatures of –10ºC, these partly raisined berries produce a nectar-like wine known for its luscious flavours, honeyed sweetness and balancing acidity. Serve with foie gras, aged cheeses, nuts and dried fruits, or biscotti.

Cave Spring Indian Summer 2006

This wine originates from Riesling grapes grown along the slopes of the Niagara Escarpment and south shore of Lake Ontario. These clusters were left to partially raisin on the vine during autumn, with further concentration of sugars and acids occurring when the berries were partially frozen by the first frosts of late fall. Selectively hand-harvested and pressed in a semi-frozen state, they deliver a sweet wine with great balance of luscious fruit and crisp acidity.

Cave Spring Pinot Noir 2005

Ruby in color with aromas of tilled earth, sour cherries, cranberry and pomegranate. A hint of gaminess along with nuances of spicy oak, especially clove, also come through on the nose. Medium in body, the attack is of dark plum, with cherry fruit, tight tannins and pencil-lead complexity emerging on the middle palate. The wine closes dry and moderately tannic with a long, fruity finish of cranberry and cherry. This is a highly aromatic, mid-weight Pinot which, while full of varietal fruit character, retains the elusive earth tones and gamy complexity which makes the grape so special.

Cave Spring Gamay Niagara Peninsula 2004

Made from the classic grape of Beaujolais, this wine originates from clay till and gravelly loam soils along the slopes of the Niagara Escarpment and banks of the Niagara River. Lighter in style, it offers notes of berries and spice along with nuances of oak and a nicely rounded palate, the result of barrel ageing for several months.
