Cave Spring
2004 Riesling Reserve

This wine originates from the limestone-rich clay till soils of Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Made from some of the oldesst, lowest-yielding vines, it is off dry in style with a distinctive mineral character that site and vine age alone can deliver.

ORIGINS:Vines averaging 20 years in age at the Cave Spring Vineyard.

COMPOSITION: 100% Riesling.

SOILS: Stony, limestone-rich clay and clay loam till overlying shale and sandstone.

YIELD: 3.5 tonnes/acre (61 hl/ha).

VINIFICATION: Cool fermentation in stainless steel using selected yeast strains and left on the lees for 3 months.

STYLE: Just off dry in style, showing the body, minerality, and bracing acidity that our estate's older vines typically deliver.

AGEABILITY: While approachable in its youth, this vintage will be at its best 2007 through to 2009, and will hold up to a decade.

FOOD MATCHES: Freshwater fish such as pickerel or trout; seafood such as scallops, shrimp or sea bass; steamed green vegetables.
