2000 Chardonnay ‘CSV’

Cave Spring estate is nestled on a sheltered terrace of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Its limestone-rich soils, gentle slope and exposure to moderated lake breezes combine to create wines which embody the highest commitment to quality and authenticity. Produced from Cave Spring Vineyard’s oldest, lowest-yielding vines, this wine give full expression to our region’s terroir.
ORIGINS: Made entirely from the oldest Chardonnay vines (23 to 27 years in age) at the Cave Spring Vineyard.
COMPOSITION: 100% Chardonnay.
SOILS: Stony, limestone-rich clay till overlying shale and sandstone.
YIELD: 2.75 tonnes/acre (52 hl/ha)
VINIFICATION: Fermented entirely in new and older French barriques, with 10 months of lees contact and partial malolactic fermentation.
STYLE: Medium to full bodied with rich barrel notes and creamy feel, all underpinned by the crisp acidity and stony texture typical of this site.
AGEABILITY: A forward, approachable vintage which will be at its best upon release in 2003 through 2007.
FOOD MATCHES: Quail, pheasant or Guinea hen with mushrooms; pork tenderloin with grain mustard; roast chicken; grilled veal chops.
