This wine originates from the limestone-rich clay till soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, and made from our lowest yielding vines. Minimally filtered, it may throw sediment with bottle age. Decant if necessary.

This wine originates from the clay till and gravelly loam soils of the Niagara Escarpment and shorelines of both Lake Ontario and the Niagara River. Barrel ageing lends silkiness to the palate, while allowing the minty fruit character typical of these Niagara varietals to shine through.

This wine was vinified in the traditional saignée method primarily from Cabernet varietals. Once crushed, these grapes remain on their skins just long enough to produce a rosé coloured must. Fermented dry, the resulting wine offers refreshing berry fruit and lively acidity, making it ideal for casual fare any time of the year.

Dry and full-bodied in style, it exhibits the spicy aromatics, richness and delicate acidity typical of the Gewürztraminer from this area of Niagara.
