This wine originates from the limestone-rich clay till soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, and made from our lowest yielding vines. Minimally filtered, it may throw sediment with bottle age. Decant if necessary.
ORIGINS: Produced from 6 to 8 year old vines at Cave Spring Vineyard.
COMPOSITION: Blended from 43% Merlot, 35% Cabernet Sauvignon and 22% Cabernet Franc.
SOILS: Grown in limestone rich clay loam till overlying shale and sandstone.
YIELD: 3,5 tonnes/acre (60 hl/ha).
VINIFICATION: Maceration of 14 days, with the assemblage barrel aged for 18 months in French and American oak barrels.
STYLE: Medium bodied Cabernet/Merlot with dark berry fruit, smoky oak, supple tannins and cedar/tobacco complexity.
AGEABILITY: Approachable in its youth, it should continue to develop favourably for 8 to 10 years
FOOD MATCHES: Roast of beef, duck or venison; rack of lamb or grilled lamb chops with ratatouille; peppercorn steak; dry, well-aged cheeses such as Cheddar or Parmesan.
