Cave Spring Riesling CSV 2004

The wines of Cave Spring Cellars originate from selected vineyards throughout the Niagara Peninsula, focusing on the benchlands of the Niagara Escarpment. Here, a combination of mineral rich soils, elevation and moderating breezes from lake Ontario create a meso-climate which gives full expression to the terroir of our region. Located on the slopes of the Beamsville Bench, the Cave Spring Vineyard is the exclusive source of Estate Bottled wines, which represent the highest commitment to quality and authenticity.

ORIGINS: The oldest Riesling vines (25 to 29 years in age) at the Cave Spring Vineyard.

COMPOSITION: 100% Riesling.

SOILS: Stony, limestone-rich clay till overlying shale and sandstone.

YIELD: 2.75 tonnes/acre (48 hl/ha)

VINIFICATION: Cool-fermented in stainless steel using selected yeast strains and left on the lees for 3 months.

STYLE: Slightly off dry with a richly extracted texture, concentrated citrus fruit and very taut, minerally acid balance.

AGEABILITY: Best approached in 2005, and capable of cellaring through at least 2015.

FOOD MATCHES: Sushi; freshwater fish (trout, pickerel); shellfish (crab, scallops, lobster); choucroute garnis; pork or veal cutlets.
