This wine originates from the limestone-rich clay till soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking lake Ontario, known as the Beamsville Bench. Dry and full-bodied in style, it exhibits the spicy aromatics, richness and delicate acidity typical of the Gewürztraminer from this area of Niagara.
ORIGINS: Gewürztraminer vines ranging from 10 to 29 years in age at Cave Spring Vineyard.
COMPOSITION: 100% Gewürztraminer.
SOILS: Stony, limestone-rich clay till overlying shale and sandstone.
YIELD: 3 tonnes/acre (56 hl/ha)
VINIFICATION: Cool-fermented in stainless steel in order to preserve the varietal’s intense aromatics and modest levels of acidity.
STYLE: Dry, full bodied with aromas of lychee, citrus and spice followed by a rich, viscous palate and delicate acid structure.
AGEABILITY: This vintage will develop optimal varietal character at 2 to 3 years, and should hold up to 5 years.
FOOD MATCHES: Smoked fish; grilled seafood or pork with fruit salsa; sausage with braised cabbage; goat’s cheese with roasted peppers.
